Yellow Tail Cabernet/Merlot??? OK… I’ll Bite.What are these two mortal enemies doing in the same bottle, and who’s bright idea was it to hold an intergalactic peace summit to work it out? Lovers of these two grapes are like the Hatfields and McCoys… they just don’t get along. Could this wine be a Secret Illuminati plot to bring the people together under a New World Order? I’m skeptical that these two wines will even stay in one bottle together without a Gravitational Field Generator, a Cold Fusion Accelerator… Oh, and throw in some Arcane Chants and a Divining Rod.We better get those items together because Yellow Tail’s got something cooking up in the kitchen. I’ll admit this wine really needs a solid 15 minutes of air before drinking. I wasn’t crazy about right out the bottle (yes… there was a glass involved), but after a bit of time there were huge berry notes emanating from the glass. In the mouth it was transformed into a “Lush” experience. It was a great balance of sweet vanilla tones intermingling with spice.It’s a rare thing indeed to find a wine that transforms this much. Truly, it was like sampling two completely different wines. This offering travels a long road in the glass, but I’d certainly venture down this way again.
